Superfood Recipe 1: Roast Veggie Quinoa Bowl with Green Tahini-Miso sauce


Originally grown in the Andes, quinoa gained global popularity because it solves a very practical nutrition problem. It provides complete plant protein along with fibre, magnesium and iron while cooking faster than most whole grains.


It also adapts easily to different meals, which is why many Australians now keep it as a pantry staple. This recipe pairs it with a star-studded lineup of superfoods that will blow the nutrient meter!


Base & Vegetables Ingredients
  • 1 cup of quinoa (fibre & complete protein)
  • 2 cups of water
  • 1 head of broccoli chopped (vitamin C, vitamin K, fibre, iron)
  • 1 cup of kale, chopped (vitamins K, A & C, fibre, iron, antioxidants)
  • 1 small red onion, sliced (antioxidants, vitamins C & K, fibre, sulphur compounds)
  • 3 purple carrots, peeled and thickly sliced (anthocyanins)
  • 2 tablespoons olive oil (antioxidants, healthy fats, oleocanthal, polyphenols)
  • Salt and pepper
  • ½ avocado sliced (healthy fats, folate, vitamins K, C, E & B6)
  • Handful of baby spinach (magnesium, iron folate, vitamins A, C & K)

The Sauce Ingredients
  • 3 tbsp of tahini paste (protein, healthy fats, calcium, magnesium, antioxidants, B vitamins)
  • 2 tbsp of lemon juice (vitamin C)
  • 1 tsp of white miso (pre- and probiotics, complete protein, antioxidants)
  • 1 tbsp of olive oil (antioxidants, healthy fats, oleocanthal, polyphenols)
  • 2-4 tbsp of cold water (di-hydrogen oxide)
  • 1 tsp of ground turmeric (curcumin)
  • 1 tsp of fresh ginger (gingerol)
  • 1 clove of garlic (allicin)
  • ½ tsp of salt
  • Cracked black pepper
  • Handful of fresh parsley (vitamins A, C & K, antioxidants)

Method

Don’t be fooled by the long ingredient list. Everything is pretty much just thrown in, while the oven and Spin & Go do all the hard work for you.


  1. Rinse quinoa under cold water.
  2. Simmer in water for about 15 minutes until fluffy.
  3. Lay out all the vegetables on a lined baking tray and roast at 200°C with olive oil, salt and pepper for about 20 minutes until caramelised.
  4. Place all the sauce ingredients in the GreenPan Spin & Go Portable Blender
  5. Blitz on “Blend” setting until the mixture achieves a smooth paste. If it’s too thick, add more water and/or a squeeze of lemon juice.
  6. Make a bed of quinoa in a bowl, and arrange the vegetables on top. Add the sliced avocado, then drizzle a generous amount of sauce.
  7. Serve!
  8. Optional Extra Superfood: Sprinkle some roasted Pepitas (magnesium, zinc, iron, healthy fats) over the top for a delicious crunch.

See! Told you it was easier than it looks! This dish should take you 35-45 minutes from start to finish.

Ingredients
  • 1 cup frozen blueberries (anthocyanins, fibre, vitamins C & K, manganese)
  • 1 frozen banana (fibre, potassium, vitamins C & B6)
  • 1 cup of coconut milk (lauric acid, medium-chain triglycerides)
  • 1 tablespoon chia seeds (omega-3 fatty acids, fibre, protein)
  • 1 tbsp of hemp seeds (omega-3 & omega-6 fatty acides, protein, fibre)
  • 1 tbsp of raw cacao powder (fibre, protein, magnesium, potassium, antioxidants)
  • 1 tbsp of ground cinnamon (polyphenols)
  • ½ tsp of ground turmeric (curcumin)
  • ½ tsp of fresh ginger (gingerol)
  • Pinch each of black pepper and sea salt
  • 1 teaspoon honey or maple syrup (optional)
  • ¼ tsp vanilla extract

Method

Again, this looks like a lot, but there’s really nothing to it:

  • Add all ingredients to the Spin & Go blender.

Ingredients:
Outer superfood shell:
  • 1 cup of almond meal (healthy fats, vitamin E, fibre, protein)
  • 6 Medjool dates (fibre, potassium, magnesium, antioxidants)
  • 1 tbsp of cacao powder (fibre, protein, magnesium, potassium, antioxidants)
  • 1 tbsp of chia seeds (omega-3 fatty acids, fibre, protein)
  • 1 tbsp of coconut oil
  • Pinch of sea salt

Matcha lava centre:
  • 3 tbsp of coconut yoghurt or Greek yoghurt (probiotic, vitamin B12, calcium, protein)
  • 1½ tsp of matcha powder (antioxidants)
  • 1 tbsp of honey or maple syrup
  • 1 tsp of almond butter (healthy fats, vitamin E, fibre, protein)
  • A splash of vanilla

Coating:
  • Another 2 tbsp of matcha
  • 1 cup of crushed pistachios (protein, fibre, healthy fats)

Method
  • Place the almond meal, dates, cacao, chia, coconut oil and salt in your Spin & Go portable blender, then blend or pulse until the mixture forms a soft dough.
  • Remove the dough and use the uber-handy clean setting on your Spin & Go to get it ready for the next step.
  • Place the remaining ingredients in the now sparklingly clean Spin & Go and blend until smooth.
  • Place small teaspoons of the matcha filling mixture on baking paper and freeze for 20 minutes, until just firm.
  • Take a dough ball and flatten it in your hand

  • Roll each ball in matcha powder, then in crushed pistachios
