1. Air-Fried Summer Mango and Sticky Tofu Power Bowls

This dish has an extraordinary balance of protein, carbohydrates, vitamins and minerals. It’s like a food pyramid in a bowl!


Ingredients
  • 400g of firm tofu, drained and pressed
  • 1 tbsp of tamari or reduced salt soy sauce
  • 1 tbsp of maple syrup
  • 1 tsp of grated ginger
  • 1 tsp of sesame oil
  • 1 ripe mango, cubed
  • 1 Lebanese cucumber, sliced
  • 1 cup of cooked quinoa or brown rice
  • Fresh mint and coriander
  • Toasted sesame seeds
  • Lime wedges for serving

Method
  1. Cut the tofu into bite-sized cubes.
  2. Mix the tamari, maple, ginger and sesame oil, then toss the tofu through.
  3. Air-fry at 190°C for 10-12 minutes, shaking halfway through.
  4. Assemble bowls: Place the tofu, mango, cucumber and herbs on a bed of quinoa or rice. Add a squeeze of lime and sprinkle some toasted sesame seeds over the top, and serve.

  • Fresh basil, chopped

Method
  1. Combine all the ingredients into a thick batter
  2. Form small patties and place in the air fryer
  3. Spray lightly with oil
  4. Cook at 180°C for 10 minutes, flipping once at the halfway

Serve with:

Coconut yoghurt mixed with garlic and dill, or a simple vegan lemon mayo.

3. Air Roasted Peach and Walnut Salad with Maple Balsamic Drizzle

Ingredients
  • 2 ripe yellow peaches, sliced
  • 1 tbsp of maple syrup
  • ½ cup of walnuts
  • 3 cups of rocket or mixed greens
  • ½ avocado, sliced
  • Balsamic vinegar
  • Olive oil
  • Sea salt

Method
  1. Toss the peaches with maple syrup and a pinch of salt.
  2. Air-fry the peaches at 190°C for 5 to 7 minutes, until caramelised.
  3. Add the walnuts in the final 2 minutes, so they’re gently toasted to bring out the flavours.
  4. Assemble: Lay out the rocket or greens in a wide bowl, then arrange the peaches and avocado slices above. Add a generous sprinkle of walnuts, then drizzle the balsamic and olive oil liberally over the top.

4. Quick Veggie Koftas with Tahini Lime Sauce

Ingredients
  • 1 can of chickpeas, rinsed and drained
  • 1 small carrot, grated
  • 1 small zucchini, grated and squeezed
  • 2 tbsp of tahini
  • 1 tbsp of lemon juice
  • 1 clove of garlic
  • ½ tsp of cumin
  • ½ tsp of smoked paprika
  • 3 tbsp of wholemeal breadcrumbs
  • Salt and pepper
  • Olive oil spray

Tahini Lime Sauce
  • 2 tbsp of tahini
  • Juice of 1 lime
  • Salt
  • Warm water to thin

Method
  1. Blend the chickpeas, tahini, garlic and spices using a food processor or hand blender until partly smooth.
  2. Stir through the grated vegetables and breadcrumbs.
  3. Shape into kofta logs or balls.
  4. Air fry at 185°C for 12 minutes, flipping halfway.
  5. Mix the sauce ingredients until silky and smooth.

Crunchy on the outside, soft inside, packed with summer vegetables, and tied together by a tangy tahini-lime sauce, this is the kind of dish that makes healthy eating feel indulgent.



5. Air Fried Pineapple Fried “Rice” (Vegan, Gluten Free, 15 Minutes)

Using cauliflower rice keeps calories low, fibre high, and the flavour combination bright, tropical and satisfying.


Ingredients
  • 3 cups of cauliflower rice
  • 1 cup of fresh pineapple chunks
  • ½ red capsicum, diced
  • ½ cup of peas
  • 2 tbsp of soy or tamari
  • 1 tsp of sesame oil (optional)
  • 1 tsp of garlic powder
  • 1 spring onion, sliced
  • Lime wedges

Method
  1. Toss the cauliflower rice with soy, sesame oil, and garlic powder.
  2. Add the pineapple, capsicum and peas.
  3. Air fry at 200°C for 8 to 10 minutes, shaking occasionally.
  4. Serve with spring onion and lime.

It is sweet, savoury, smoky and tropical. It has everything you want from a vegan dish, without the heaviness traditional fried rice can bring. For more protein, swap cauliflower rice for cooked quinoa.
