Almond Quiche
Give your classic quiche a nutty twist, with this delicious air fryer Almond Quiche recipe. With a gluten-free crust made with almond flour, enjoy a savoury treat that’s both healthy and easy to make.

Ingredients
- 150 g almond flour
- ½ tsp thyme
- ¼ tsp salt
- 400 g pumpkin, peeled, cored, and cut into 2 cm cubes
- 1 medium red onion, finely chopped
- 6 slices pancetta, cut into florets
- 3 eggs
- 150 ml soy cream
- 100 g cottage cheese
- A few sprigs of fresh thyme

Preparation Instructions
- Mix the crust ingredients with 65 ml olive oil and 1 tbsp water and pour into a quiche dish. Press down firmly and ensure the dough is evenly thick throughout.
- Preheat the air fryer and bake the crust for 10 minutes at 180°C (350°F).
- Remove from the air fryer and let it cool slightly in the dish.
- Mix the pumpkin and onion with the olive oil, salt, and pepper.
- Pour into the air fryer and select the vegetable program, but increase the cooking time to 15 minutes. Once done, pour the pumpkin and onion onto the baked crust.
- Top with pancetta florets.
- Mix the eggs with the cream and season with salt and pepper.
- Pour into the quiche dish. Top with mounds of cottage cheese and bake in a preheated air fryer at 185°C (350°F) for 30 minutes.
- Check if the filling is cooked through. If necessary, bake for another 5 minutes at 180°C (350°F), but cover the quiche.
- Garnish with a few sprigs of thyme. Serve hot, lukewarm, or cold
