Blackberry Clafoutis
This easy to make, custardy delight is a treat at any time of the day. Enjoy it hot, cold or room temperature (and feel free to swap in your favorite berry or fruit).
Ingredients
- 3 large eggs
- 1/2 cup granulated sugar
- 6 tablespoons unsalted butter, melted and cooled slightly, plus more to butter dish
- 1 cup all purpose flour
- 1/2 teaspoon kosher salt
- 1 cup whole milk
- 1 teaspoon vanilla extract
- 2 generous cups blackberries

Preparation Instructions
- Heat the oven to 400°F. Lightly butter the 20cm Frypan.
- In a large mixing bowl, whisk together the eggs and sugar until pale yellow in color. Gradually whisk in the butter, followed by the flour and salt all at once; mix until well combined. While continuing to whisk, slowly pour in all of the milk and vanilla until completely combined.
- Arrange the blackberries in the bottom of the prepared frypan. Pour the batter over the berries then transfer to the oven. Bake for 25 to 30 minutes, until slightly browned and almost completely set in the middle. Let sit at least 15 minutes before serving in wedges.
Tips
Traditionally, clafoutis is made with cherries. It’s also delightful with any stone fruit, such as plums, peaches or nectarines.
