Chicken & Veggie Stir Fry

An easy alternative to takeout, our tasty chicken stir fry comes together in your electric skillet in less than 30 minutes. Loaded with fresh veggies in a savory-sweet sauce, it’s perfect served over steamed rice or your favorite noodles.

Chicken & Veggie Stir Fry

Ingredients

  • 1 tablespoon corn starch
  • 2 tablespoons cold water
  • 1/4 cup chicken broth
  • 3 tablespoons soy sauce
  • 1/4 cup honey
  • 1 tablespoon toasted sesame oil
  • 1 pound boneless, skinless chicken breasts, sliced in thin strips
  • Salt and pepper
  • 2 tablespoons olive oil, divided
  • 2 cups broccoli florets
  • 1 red bell pepper, cut into thin strips
  • 2 carrots, peeled and sliced
  • 2 teaspoons minced ginger
  • 2 cloves garlic, minced

Preparation Instructions

  1. Preheat electric frypan to 175°C
  2. Whisk together corn starch and water in a small bowl. Add chicken broth, soy sauce, honey, and sesame oil and whisk to combine. Set aside
  3. Add one tablespoon olive oil to preheated skillet. Place chicken in skillet and sprinkle generously with salt and pepper. Cook, stirring frequently, until no longer pink, about 3 to 5 minutes. Remove chicken from skillet and set aside
  4. Reduce heat to 145°C and add remaining tablespoon of olive oil to skillet. Add in broccoli, bell pepper, and carrots and stir fry until tender but still crisp. Add ginger and garlic and cook, stirring constantly, for another minute
  5. Return chicken to skillet. Give sauce another quick whisk and pour over stir fry. Stir to combine evenly. Bring to a boil, stirring frequently, and let boil for 1 minute. Serve piping hot

Tips
