Chocolate Chip Skillet Cookie

Ingredients

  • 250g unsalted butter, melted
  • 1 & 1/2 cups of brown sugar, packed
  • 1/2 cup of caster sugar
  • 2 eggs + 1 egg yolk, room temperature
  • 1 tsp vanilla paste or extract
  • 3 cups of plain flour
  • 1 tsp of bicarbonate soda
  • 1/2 tsp of baking powder
  • 1 tsp salt + salt flakes for sprinkling
  • 200g dark chocolate baking chips
  • Vanilla ice cream, to serve

Preparation Instructions

  1. Preheat the oven to 180°C and generously grease a 24cm frying pan or skillet with butter.
  2. In a large mixing bowl add the melted butter, brown sugar, and caster sugar. Using handheld beaters or a stand mixer with the whisk attachment, beat until mixed together. Add in the eggs, egg yolk, and vanilla extract and beat until light and fluffy.
  3. Add salt, baking powder and bicarbonate soda, as well as the flour. Beat again until everything comes together, you may prefer to use a wooden spoon or spatula for this step. Once combined, Fold in the chocolate chips.
  4. Transfer the cookie dough to your prepared fry pan or skillet and smooth into an even layer.
  5. Bake at 180°C for 25 minutes or until the edges are just golden brown, the centre will be slightly gooey still.
  6. Allow to cool for at least 15 minutes before serving, top with scoops of vanilla ice cream. Best to enjoy this one warm! Hand out spoons and everyone dig in!
