Chocolate Chip Skillet Cookie

Ingredients
- 250g unsalted butter, melted
- 1 & 1/2 cups of brown sugar, packed
- 1/2 cup of caster sugar
- 2 eggs + 1 egg yolk, room temperature
- 1 tsp vanilla paste or extract
- 3 cups of plain flour
- 1 tsp of bicarbonate soda
- 1/2 tsp of baking powder
- 1 tsp salt + salt flakes for sprinkling
- 200g dark chocolate baking chips
- Vanilla ice cream, to serve

Preparation Instructions
- Preheat the oven to 180°C and generously grease a 24cm frying pan or skillet with butter.
- In a large mixing bowl add the melted butter, brown sugar, and caster sugar. Using handheld beaters or a stand mixer with the whisk attachment, beat until mixed together. Add in the eggs, egg yolk, and vanilla extract and beat until light and fluffy.
- Add salt, baking powder and bicarbonate soda, as well as the flour. Beat again until everything comes together, you may prefer to use a wooden spoon or spatula for this step. Once combined, Fold in the chocolate chips.
- Transfer the cookie dough to your prepared fry pan or skillet and smooth into an even layer.
- Bake at 180°C for 25 minutes or until the edges are just golden brown, the centre will be slightly gooey still.
- Allow to cool for at least 15 minutes before serving, top with scoops of vanilla ice cream. Best to enjoy this one warm! Hand out spoons and everyone dig in!
