Fried Doughnuts
With just a little patience and time you can have light, fluffy and warm doughnuts. Toss them in cinnamon sugar, powdered sugar or glaze them up- any way you finish them, you’re sure to finish them all.
Ingredients
- 3 cups all purpose flour
- 1/4 cup granulated sugar
- 1/2 teaspoon kosher salt
- 2 teaspoons active dry yeast
- 1 large egg
- 1 cup whole milk
- 2 tablespoons unsalted butter, melted
- 1 teaspoon vanilla extract
- 6 cups peanut oil or vegetable shortening, for frying

Preparation Instructions
- In a large mixing bowl or the bowl of a stand mixer, whisk together the dry ingredients. In a small mixing bowl or liquid measuring cup, whisk together the egg, milk, melted butter and vanilla. Pour the wet ingredients into the dry and, using the dough hook, dough whisk or your hands, knead just until it comes together to form a soft, smooth dough. Cover and allow it to rest for 5 minutes.
- Uncover and knead for 6 to 8 minutes or until the dough is smooth, shiny and soft. Transfer to a lightly greased bowl or container, cover and allow it to proof in a warm, draft free spot until doubled in size, about 1 ½ - 2 hours.
- Lightly flour your work top and gently turn the dough out onto the flour. Gently roll it to ¼-inch thick, and cut out doughnuts with a 3-inch round cutter. Cover loosely with greased plastic wrap and let the doughnuts rise for 30 minutes to an hour, until doubled in size.
- Heat the oil or shortening in the 28cm Skillet to 180°C. Once the oil is hot, carefully place 2 to 3 doughnuts in the oil and fry until golden brown, about 3 minutes, before flipping over to cook the other side until golden brown. Remove from the oil with a slotted spoon and drain on a rack set over a sheet tray or paper towels. Fill or frost doughnuts as desired, using your choice of sugar topping or glaze.
Tips
You can use a smaller circle cutter to cut out the centers, so you have a classic ring doughnut and doughnut holes.
