Lemon and Lime Meringue Cupcake
Ingredients
- 2 cups of flour
- 1 tablespoon of baking powder
- ½ teaspoon salt
- 1 cup cream
- 2 eggs
- ⅔ cups sugar
- 8 tablespoons unsalted butter melted
- 1 teaspoon vanilla
- zest of one lemon
- zest of one lime
- ¾ cup of condensed milk
- juice of 2 lemons
- juice of 1 lime
- 4 egg whites
- 1 cup of sugar
- ¼ teaspoon of cream of tartar

Preparation Instructions
- Preheat the oven to 180•C and put linen over the cupcake pan.
- Measure all the ingredients for the cupcakes in a stand mixer bowl: flour, baking powder, salt, cream, eggs, sugar, melted butter, vanilla, and zest. Mix for 5 minutes.
- Pour the mixture into each linen, only ¾ of the cupcakes. Bake for 17 minutes or until a toothpick comes out clean. Cool for 15 minutes.
- To prepare the filling, mix condensed milk, lemon, and lime juice. Cut a hole in the middle of the cupcake and fill it with a tablespoon of filling.
- Meanwhile, add the egg whites, sugar, and tartar cream to a stand mixer bowl and beat on medium-high speed until the sugar is dissolved. Put the meringue in a pipping bag and pipe each of the cupcakes.
- You can garnish with a wedge of lime or lemon.
