Lemon and Lime Meringue Cupcake

Ingredients

  • 2 cups of flour
  • 1 tablespoon of baking powder
  • ½ teaspoon salt
  • 1 cup cream
  • 2 eggs
  • ⅔ cups sugar
  • 8 tablespoons unsalted butter melted
  • 1 teaspoon vanilla
  • zest of one lemon
  • zest of one lime
  • ¾ cup of condensed milk
  • juice of 2 lemons
  • juice of 1 lime
  • 4 egg whites
  • 1 cup of sugar
  • ¼ teaspoon of cream of tartar

Preparation Instructions

  1. Preheat the oven to 180•C and put linen over the cupcake pan.
  2. Measure all the ingredients for the cupcakes in a stand mixer bowl: flour, baking powder, salt, cream, eggs, sugar, melted butter, vanilla, and zest. Mix for 5 minutes.
  3. Pour the mixture into each linen, only ¾ of the cupcakes. Bake for 17 minutes or until a toothpick comes out clean. Cool for 15 minutes.
  4. To prepare the filling, mix condensed milk, lemon, and lime juice. Cut a hole in the middle of the cupcake and fill it with a tablespoon of filling.
  5. Meanwhile, add the egg whites, sugar, and tartar cream to a stand mixer bowl and beat on medium-high speed until the sugar is dissolved. Put the meringue in a pipping bag and pipe each of the cupcakes.
  6. You can garnish with a wedge of lime or lemon.
