Quick Tomato Soup
Ingredients
- oil
- 2 onions
- 2 teaspoon minced garlic
- 1 tablespoon tomato paste
- 3 laurel leaves
- 4 cans of diced tomatoes
- 300 grams passata
- 2 cups of meat stock
- ¼ cup of red wine
- 1 tablespoon of sugar
- Salt and pepper
- Cream for a drizzle

Preparation Instructions
- Dice the onions thinly. Preheat the pot pan, drizzle with oil, and fry the onions until translucent. Add the minced garlic, tomato paste, and laurel leaves. Cook them for a couple of minutes to develop the flavours.
- Add the cans of tomato, passata, meat stock, red wine, sugar, salt and pepper. Cook the mixture for 30 minutes over medium heat until the liquids are reduced.
- Taste the seasoning and serve the soup. Drizzle with cream. Pair it with some bread.
