Quick Tomato Soup

Ingredients

  • oil
  • 2 onions
  • 2 teaspoon minced garlic
  • 1 tablespoon tomato paste
  • 3 laurel leaves
  • 4 cans of diced tomatoes
  • 300 grams passata
  • 2 cups of meat stock
  • ¼ cup of red wine
  • 1 tablespoon of sugar
  • Salt and pepper
  • Cream for a drizzle

Preparation Instructions

  1. Dice the onions thinly. Preheat the pot pan, drizzle with oil, and fry the onions until translucent. Add the minced garlic, tomato paste, and laurel leaves. Cook them for a couple of minutes to develop the flavours.
  2. Add the cans of tomato, passata, meat stock, red wine, sugar, salt and pepper. Cook the mixture for 30 minutes over medium heat until the liquids are reduced.
  3. Taste the seasoning and serve the soup. Drizzle with cream. Pair it with some bread.
