Scalloped Potatoes
Tender Yukon Golds swimming in a creamy sauce and topped with bubbly Swiss or cheddar cheese—our electric skillet scalloped potatoes are easy to make and impossible to resist.

Ingredients
- 1 tablespoon butter
- 2 pounds Yukon Gold potatoes, scrubbed and thinly sliced
- 1/2 medium onion, diced
- 3/4 cup vegetable stock
- 1/2 cup heavy cream
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground pepper
- Pinch of freshly ground nutmeg
- 1 1/4 cups shredded cheddar, Swiss, or Gruyère cheese

Preparation Instructions
- Preheat electric skillet to 145°C
- Melt butter in skillet. Add potatoes and onion and sauté, stirring frequently, for about 5 minutes
- In a small bowl, whisk together vegetable stock, cream, salt, pepper, and nutmeg
- Pour sauce over potatoes and increase heat to 175°C. Bring to a boil. Reduce heat to 90°C, cover skillet, and cook until sauce thickens and potatoes are tender when pierced with a fork, about 15 minutes. Sprinkle with cheese, cover, and continue cooking until cheese is nicely melted, about 3 to 5 minutes. Serve warm
