Scalloped Potatoes

Ingredients

  • 1 tablespoon butter
  • 2 pounds Yukon Gold potatoes, scrubbed and thinly sliced
  • 1/2 medium onion, diced
  • 3/4 cup vegetable stock
  • 1/2 cup heavy cream
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground pepper
  • Pinch of freshly ground nutmeg
  • 1 1/4 cups shredded cheddar, Swiss, or Gruyère cheese

Preparation Instructions

  1. Preheat electric skillet to 145°C
  2. Melt butter in skillet. Add potatoes and onion and sauté, stirring frequently, for about 5 minutes
  3. In a small bowl, whisk together vegetable stock, cream, salt, pepper, and nutmeg
  4. Pour sauce over potatoes and increase heat to 175°C. Bring to a boil. Reduce heat to 90°C, cover skillet, and cook until sauce thickens and potatoes are tender when pierced with a fork, about 15 minutes. Sprinkle with cheese, cover, and continue cooking until cheese is nicely melted, about 3 to 5 minutes. Serve warm
