Preparation Instructions
- Prepare Muffin Cups: Line a silicone muffin tray or use silicone muffin cups. If using a metal muffin tin, lightly grease it.
- Mix Wet Ingredients: In a mixing bowl, combine the mashed bananas, maple syrup, plant-based milk, vegetable oil, and vanilla extract. Mix until well combined.
- Combine Dry Ingredients: In another bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon.
- Combine Mixtures: Gradually add the dry ingredients to the wet ingredients, stirring until just combined. If using, fold in walnuts or chocolate chips.
- Fill Muffin Cups: Spoon the batter into the prepared muffin cups, filling each about 3/4 full.
