Vegan Airfryer Banana Bread Muffins

Ingredients

  • 2 ripe bananas, mashed
  • 1/4 cup maple syrup (or agave syrup)
  • 1/4 cup plant-based milk (almond, soy, etc.)
  • 1/4 cup vegetable oil (or melted coconut oil)
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour (or whole wheat flour)
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon (optional)
  • 1/4 cup walnuts or chocolate chips (optional)

Preparation Instructions

  1. Prepare Muffin Cups: Line a silicone muffin tray or use silicone muffin cups. If using a metal muffin tin, lightly grease it.
  2. Mix Wet Ingredients: In a mixing bowl, combine the mashed bananas, maple syrup, plant-based milk, vegetable oil, and vanilla extract. Mix until well combined.
  3. Combine Dry Ingredients: In another bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon.
  4. Combine Mixtures: Gradually add the dry ingredients to the wet ingredients, stirring until just combined. If using, fold in walnuts or chocolate chips.
  5. Fill Muffin Cups: Spoon the batter into the prepared muffin cups, filling each about 3/4 full.
  6. Preheat Airfryer: Preheat your airfryer to 160°C for about 3-5 minutes.
  7. Air Fry Muffins: Place the muffin tray in the airfryer basket. Cook for 10-12 minutes, or until a toothpick inserted into the center comes out clean.
  8. Cool and Serve: Allow the muffins to cool in the tray for a few minutes before transferring them to a wire rack. Enjoy warm or at room temperature!
